Full extraction and line degrease carried out overnight ahead of a health inspection.
A busy CBD kitchen needed its extraction system cleared before inspection, without closing for service. We came in after last orders and worked through the night: hood, filters and ducting stripped and degreased, the cooking line and fryers cleaned down, walls and ceiling degreased, and floor drains cleared. A hygiene report was issued for the inspection file.
